Fried Chicken Pieces

Fried Chicken Pieces, also known as “Eight Pieces of Chicken”, is a famous traditional dish among Han Chinese in Henan Province. It falls into the Henan cuisine category. The ingredients of Fried Chicken Pieces include spring chicken, chicken gizzard, chicken liver, and starch (broad bean). The interesting, loud dish-introducing jargon at local restaurants—"Dry fry bean sauce without any wet starch; the chicken is chopped into eight clumps"—actually makes reference to this dish with its latter part. According to legend, Emperor Qianlong of the Qing Dynasty stayed in Kaifeng while on his inspection tour of the waterways. He had a taste of its flavor. Consequently, Fried Chicken Pieces achieved worldwide fame. So far, it has had a history of nearly 200 years. In the 1820s, Chef Liu Genglian and others at Youyixin Restaurant in Kaifeng improved it, taking the flavor up a notch.
